Taste & Create XVI - Crispy Pakoras

Prepared pakoras for the Taste and Create XVI. My partner was Tara.

Ingredients:

1 Red Onion thinly and vertically sliced
1 Green chilli sliced into very small pieces or 1/2 tsp red chilli powder
a pinch of ginger and garlic paste
1 tsp freshly chopped coriander/parsley leaves
1 tsp dill
pinch of salt
besan
oil for frying

Method:

1. Mix the first 6 ingredients in a bowl.

2. Then add besan to hold the mixture. Don't add any water if u want crispy pakoras. Also don't add too much of besan. You need besan just to hold the mixture. When u take a small portion of the mixture and press it it should hold together. By not adding water less oil is absorbed.

3. Heat the oil. Take small amounts of the mixture, gently press them together. Drop it inside the oil. Deep fry them till almost golden brown. Don't turn the pakoras often.

4. Place the pakoras on a tissue paper to drain the oil. Serve hot with tomato ketchup.


Result: Crispy and yum
