Ingredients:
1 Zucchini sliced into thick pieces vertically
1 tbsp Olive oil
1 garlic cloves crushed or 1 tsp garlic paste
1 tsp cumin powder
1 tsp coriander powder
1/4 tsp ground pepper
Salt to taste
Greek yoghurt to serve
Method:
1) Preheat oven to 200 C
2) In a bowl mix the first 5 ingredients.
3) In a baking tray, place the mixture and season with salt and pepper.
4) Roast for 15-20 mins (depends on the oven) until tender and starts to change color . Keep tossing every now and then.
5) Serve with yoghurt.
